Combine rooster, sausage, collard greens, bell pepper, celery, and onion in a 3 1/2- or 4-quart gradual cooker. Glide in tomatoes, tapioca, garlic, thyme, and crushed crimson pepper.
Quilt and cook dinner on Low for 5 to 6 hours or on High for 2 1/2 to three hours.
If utilizing low setting, turn to High. Glide in small. Quilt and cook dinner for Half-hour extra or till small are opaque. Assist over hot cooked brown rice. Sprinkle with parsley.
Tip: Rinse collard greens smartly and steal away any no longer easy stems or ribs sooner than cutting.
