English or kirby cucumber, peeled or no longer, medium dice

mango, firm but ripe, peeled, medium dice

shrimp red onion, medium dice

shrimp garlic clove, minced

shrimp jalapeno, finely diced, or several dashes of Cholula or Sriracha

chopped new mint or cilantro, or both

zest of 1 lime

lime juice

Directions
- In a bowl, mix the cucumber, mango, onion, garlic, jalapeno, mint, and lime zest. Toss lightly.
- In a measuring cup, hasten the lime juice, oil and honey. Pour over the veggies and blend gently.
- Add salt and pepper to model. Aid without delay, for optimal crunch!
