  • 1 teaspoon lemon juice
  • zest 1 medium lemon
  • 1 stick unsalted butter, softened
  • 1 cup sugar
  • 1 tremendous egg, room temperature
  • 1 1/2 teaspoon vanilla
  • 2 cups flour + 1 TBSP
  • 1 3/4 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups thinly sliced rhubarb
