Maudie’s Pumpkin Cake Cookies
Substances:
- 2 c flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 c shortening
- 1/2 c brown sugar
- 1/2 c cane sugar
- 1 c pumpkin
- 1 egg
- 1 tsp. vanilla
- 1/2 c chopped nuts **now not compulsory
- For the frosting:
- 1/4 c butter
- 1/2 c brown sugar
- 1/8 tsp. salt
- 1/3 c evaporated milk
- 2 c confectioners sugar
- 1/2 tsp. vanilla
Directions:
- Preheat oven to 350 degrees.
- Sift the dry substances.
- Cream the sugar, shortening and egg together. Then add the remainder of the substances.
- Scoop the cookies with an ice cream scooper onto a parchment lined baking sheet.
- Bake for 10 to 12 minutes.
- Combine the butter, brown sugar, salt and evaporated milk in a double boiler till soft. Cool this a puny then beat in the confectioners sugar and vanilla.
- High the frosting on the a puny cooled cookies and revel in!
