- 1 onion, sliced
- 1 garlic clove, sliced
- 2 tbsp olive oil
- 300g pack beef disappear-fry strips, or exhaust beef steak, thinly sliced
- 1 yellow pepper, deseeded and thinly sliced
- 400g can chopped tomato
- sprig rosemary, chopped
- handful pitted olives
In a huge saucepan, cook dinner onion and garlic in olive oil for 5 minutes till softened and turning golden. Tip within the meat strips, pepper, tomatoes and rosemary, then reveal to the boil. Simmer for 15 minutes till the meat is cooked thru, adding some boiling water if wanted. Run thru the olives and support with mash or polenta.
MAKE IT VEGETARIAN
Miss the meat and cook dinner 1 chopped aubergine and 1 chopped courgette alongside with the pepper.
Carry out by sprinkling over some feta cheese.
