- 2 teaspoons chopped unusual thyme (or 1 tsp dried)
- 1 (28 ounce) can Italian tomatoes , drained & chopped
- 1 onion , finely chopped
- 1/4 cup purple wine (instructed!) (no longer mandatory)
- 6-8 tiny onions , coarsely chopped
- 1 bay leaf
- 1/4 cup chopped unusual Italian parsley
- 1/4 cup flour
- 6-8 carrots , coarsely chopped
- 2 tablespoons light olive oil
- 2 tablespoons butter (or margarine)
- 2-2 1/2 lbs lean purple meat , crop into cubes
- 4 cups purple meat stock
- 6-8 potatoes , coarsely chopped
- salt & pepper
