Calcutta Pork Curry
Components:
- 2 oz. desiccated coconut
- 1 teaspoon shaded peppercorns
- 1 lb pork , Braising, trimmed and Cubed
- 1/4 pint water
- 2 dried crimson chilies, gentle (to style)
- 1/2 pint pork stock
- 1 1/2 teaspoons cumin seeds
- 1 teaspoon garlic , crushed
- 1 medium onion , Sliced
- 1 teaspoon salt
- 2 oz. oil or ghee
- 3 teaspoons coriander seeds
- 1 teaspoon ground turmeric
- 1 lemon
- 2 inches fresh ginger , grated
