Beef and Guinness Stew (Jamie Oliver)

Ingredients:

  • * 800 gram red meat brisket, gash into 1 to thick dice
  • * 2 big onion, peeled and sliced
  • * 2 carrot, peeled and chopped into big chunk
  • * 3 bay leaf
  • * 1 can chopped tomato (434g 15oz)
  • * 500 ml guinness, change with red meat stock if desired (2 cup)
  • * scant teaspoon table salt
  • * freshly floor sad pepper
  • * 1 to 2 tablespoon brown sugar
  • * 250 gram mushroom, halved or quartered
  • roux
  • * 2 tablespoon all cause flour
  • * 2 tablespoon unsalted butter
