- 1 medium yellow onion, chopped

- Pepper
- 1pint cherry tomatoes
- 2cloves garlic, minced
- 1cup dry quinoa
- 2cups vegetable stock
- ¼teaspoon paprika
- 2oz. at ease goat cheese
- ¼cup basil, chopped

In a medium saucepan with a lid, over medium heat, heat oil. Add onion, season with salt and pepper, and cook dinner, stirring, till onion begins to soften, 3 minutes. Add tomato and garlic and cook dinner, stirring, till garlic is fragrant, just a few minute. Add quinoa and cook dinner, stirring, till combination is totally blended. Add vegetable stock and paprika and bring to a boil. Prick back heat to low, duvet, and cook dinner 15 minutes, till quinoa is fluffy and liquid is absorbed.
