Straightforward Squash Risotto
Ingredients:
- 1 tiny onion , finely chopped
- 1 celery stick, finely chopped
- 1.0 tsp unique thyme leaves , picked
- 600.0ml vegetable stock
- 1 bay leaf
- 50.0g Parmesan , finely grated
- 100.0ml white wine
- 140.0g risotto rice (we devour carnaroli)
- 4.0 tbsp light olive oil
- 50.0g unsalted butter
- 1 butternut squash
- 2 garlic cloves , crushed
