Substances:
- 4 tablespoons unsalted butter
- 3 eggs, separated
- 2 cup sugar
- 14 oz. rice flour
- 3 tablespoons cornstarch
- 1 cup low-stout buttermilk
- 1 tablespoon baking powder
- ½ tsp baking soda
- 1 tablespoon vanilla
Instructions:
- Preheat oven to 350F. Grease 12 muffin cups.
- Beat butter, egg yolks and sugar till creamy.
- Add rice flour, corn starch, vanilla and buttermilk, and beat for a pair of minutes.
- Add baking powder and gently combine.
- Beat egg white 5-6 minutes, till foamy and gentle-peaked.
- Bake for 20 minutes, or till golden.
