For the Upside-down Caramel Topping

  • 1/4 cup (2 oz.) unsalted butter
  • 3/4 cup (5&1/4 oz.) granulated sugar
  • 2 tablespoons lemon juice (about 1/2 lemon)
  • 4 cups (1&1/2 pounds) pitted candy cherries

For the Cake

  • 1 cup spelt flour
  • 3/4 cup all reason flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 3/4 cup (6 oz.) unsalted butter
  • 1 cup plus 2 tablespoons granulated sugar
  • zest and juice of 1 medium orange
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup (7&1/2 oz.) bitter cream
