Tex-Mex Squash Casserole

Ingredients:

  • 2 x Yellow Squash, lop into cash
  • 4 cup 2 zucchini, lop into cash
  • 1 medium onion, diced
  • 2 x cloves of garlic, minced
  • 1 x jalapeno, diced
  • 2 tbsp Butter
  • 1 can Ro-Tel tomatoes, drained or two cups of diced fresh tomatoes with 1/4 cup of diced inexperienced chiles, corresponding to a jalapeno
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1/2 tsp Cayenne Pepper
  • 1 cup rooster or vegetable broth
  • 2 tbsp Flour
  • 1/2 cup Half of And Half of
  • 1/2 cup Sour Cream
  • 1/2 cup cilantro, chopped
  • 2 cup grated pepper jack and cheddar
  • 2 cup crushed tortilla chips
  • Salt and pepper to model
