Tex-Mex Squash Casserole
Ingredients:
- 2 x Yellow Squash, lop into cash
- 4 cup 2 zucchini, lop into cash
- 1 medium onion, diced
- 2 x cloves of garlic, minced
- 1 x jalapeno, diced
- 2 tbsp Butter
- 1 can Ro-Tel tomatoes, drained or two cups of diced fresh tomatoes with 1/4 cup of diced inexperienced chiles, corresponding to a jalapeno
- 1 tsp Chili Powder
- 1 tsp Cumin
- 1/2 tsp Cayenne Pepper
- 1 cup rooster or vegetable broth
- 2 tbsp Flour
- 1/2 cup Half of And Half of
- 1/2 cup Sour Cream
- 1/2 cup cilantro, chopped
- 2 cup grated pepper jack and cheddar
- 2 cup crushed tortilla chips
- Salt and pepper to model
