- 3 boneless, skinless hen breasts (about 4 oz.every)
- 4 large celery stalks, chopped
- 2 Granny Smith apples, peeled, cored and cut into 1/2-poke cubes
- 1 red bell pepper, cored, seeded, and diced
- ¾cup reduced-stout bitter cream
- ½cup lowfat unsightly yogurt
- ¼cup golden raisins
- ¼cup chopped walnuts
- 1tablespoon honey
- 2teaspoons fresh lemon juice
- 4cups mesclun

Coat a medium pan with cooking spray. Warmth over medium heat; sear hen 8 to 10 minutes per aspect. When hen reaches 155°F, fetch from pan. Let icy; dice. Combine closing ingredients except greens in a bowl with hen. Add salt and pepper. Refrigerate 1 hour. Divide greens and hen amongst plates.
