Healthy Vegetarian Quinoa Biryani

This Vegetarian Biryani recipe is a healthy bewitch on a frail Indian dish that combines the rich flavors of frail spices with vegetables and prepared by layering the spiced vegetables with quinoa. —WarriorInTheKitchen

Ingredients

  • 1 tablespoon

    avocado oil


  • 2

    total dry chili peppers


  • 2

    total bay leaves


  • 1/2

    cinnamon stick, broken into pieces


  • 4

    total cloves


  • 1/2 teaspoon

    cumin seeds


  • 1

    zucchini, thinly sliced


  • 1

    medium onion


  • 1

    petite eggplant, thinly sliced


  • 1 cup

    frozen blended vegetables


  • 2

    inexperienced chilis, sliced


  • 4

    cloves garlic, finely chopped


  • 2 teaspoons

    minced ginger


  • 2 teaspoons

    paprika


  • 1 teaspoon

    red chili powder


  • 1/2 teaspoon

    turmeric


  • 1 teaspoon

    salt


  • 2 teaspoons

    biryani masala


  • 1/2 cup

    water


  • 4 cups

    cooked quinoa

Instructions
  1. Warmth avocado oil in pan.
  2. Add total spices like bay leaves, cinnamon sticks, dry chili peppers, cloves and total cumin seeds.
  3. Once the spices beginning to sizzle, add the chopped veggies and garlic and ginger.
  4. Add the rest of the spices and water and mix neatly.
  5. Cook for roughly 5 minutes, unless veggies obtain softened and the flavors obtain incorporated.
  6. In a separate pan, alternate with a bed of quinoa layered with the cooked veggies.
  7. Garnish with chopped cilantro.
