  • 3 1/2 tablespoons unsalted butter or unsalted margarine , divided
  • 3/4 cup shallot (3 to 4 shallots)
  • 1 1/2 tablespoons olive oil
  • 2 tablespoons coarsely new ground shaded pepper
  • 6 filet mignon, decrease 1-1/4-chase thick
  • 1 cup canned crimson meat broth
  • chopped parsley , garnish (now not compulsory)
  • 1/2 cup handsome cognac or brandy
  • kosher salt
