Cowboy Bean and Crimson meat Stew
Ingredients:
- ½ tablespoon coconut or canola oil
- 6 slices bacon, chopped
- 1 pound floor sirloin
- 1 teaspoon red meat rub
- 1 broad onion, diced
- 2 medium Idaho or russet potatoes, peeled and diced into chunk sized
- 2 broad carrots, peeled and sliced
- 1 poblano pepper, seeded and diced
- 1 Anaheim pepper, seeded and diced
- 4 cloves garlic, minced
- 1 ½ tablespoons chili powder
- ½ teaspoon every Kosher salt and freshly floor shadowy pepper
- 2-3 cups low sodium red meat stock
- 2 tablespoons Worcestershire sauce
- 2 (15-ounce) cans baked beans*
- 1 (14-ounce) can diced fire-roasted tomatoes
- 1 broad bay leaf
- 2-3 scallions, thinly sliced, for serving
