Chilli Salt & Pepper Squid With Smacked Cucumber Salad

  • vegetable oil, for deep-frying plus relatively extra
  • 450 g medium-sized squid, cleaned
  • 2 tablespoon cornflour
  • 3 tablespoon semolina
  • 1 tablespoon ground paprika
  • 1 medium-hot red chilli, thinly sliced on the diagonal
  • 2 spring onions, trimmed and thinly sliced on the diagonal
  • 1 toddler cucumber
  • 4 tablespoon rice wine vinegar
  • 2 tablespoon caster sugar
  • 1 small red onion, minimize into very gorgeous wedges
