medium carrot, chopped

celery stalk, chopped

cups low-salt vegetable or hen broth

cup long- or short-grain brown rice

/2 pound spinach, roughly chopped

/2 pound Swiss chard or kale, middle ribs and stems eliminated, roughly chopped

Step 1
Heat oil in a dapper pot over medium-high warmth. Add sausage and cook, breaking up into minute pieces with a wooden spoon, except browned, about 5 minutes. Transfer sausage to a plate. Add onion, carrot, and celery to pot and cook, stirring every so steadily, except onion is soft, about 8 minutes. Add garlic, cumin, and pepper flakes and cook, stirring repeatedly, for 1 minute.
Step 2
Add broth and rice. Bring to a boil. Decrease warmth to medium-low and simmer except rice is soft, about 30 minutes. Add reserved sausage, spinach, and Swiss chard. Season soup to taste with salt and cook except greens are soft, about 5 minutes. Inch in lemon juice.
