Plod together soy sauce, vinegar, and sugar till sugar is dissolved. In a reasonably nonstick skillet or wok, heat 1 teaspoon oil over medium-high. Add egg and cook till set up; switch to a cutting board. Add remaining 1 tablespoon oil to skillet. Add carrot and cook, stirring, till softened, 3 minutes. Add scallion, ginger, and garlic and cook till scallion is tender, 2 minutes. Add rice and cook, tossing, till warmed by, 2 minutes. Add spinach and cook till wilted, 2 minutes. Add soy sauce combination and cook, stirring, till liquid is absorbed, 1 to 2 minutes. Coarsely slice egg and trudge into rice.
