Components
- 1 onion, sliced
- 4 tbsp vegetarian korma or Madras curry paste
- 1l milk
- 750g frozen mixed vegetable
- 175g quinoa, rinsed
Technique

STEP 1
Simmer the onion and the curry paste with a splash of water for 5 minutes in a mountainous saucepan, stirring infrequently. Warmth the milk in a jug within the microwave.

STEP 2
Add the greens and quinoa, then scuttle within the milk. Bring to the boil, simmer gently for 10 minutes unless the quinoa is cooked. Check seasoning. Encourage with warm naan bread.
RECIPE TIPS
USE RICE
In case you doubtlessly can’t win quinoa, this
soup will work correct as neatly with
rice. Rinse 300g prolonged-grain or basmati
rice and cook within the laksa unless soft.
