Spinach-Quinoa Truffles with Bell Pepper Enjoy

- 2 crimson bell peppers, halved and seeded
- 2 tablespoons chopped new flat-leaf parsley
- 1 teaspoon balsamic vinegar
- 1/8 teaspoon kosher salt
- 1/8 teaspoon ground crimson pepper
- Truffles:
- 1 1/2 teaspoons canola oil
- 1 cup chopped onion
- 3/4 cup uncooked quinoa
- 1 tablespoon minced garlic
- 1 1/3 cups natural vegetable broth
- 2 cups spinach leaves, coarsely chopped
- 2 oz. goat cheese, crumbled (about 1/2 cup)
- 1/2 cup total-wheat panko (Jap breadcrumbs)
- 3/8 teaspoon kosher salt
- 1/2 teaspoon freshly ground unlit pepper
- 2 colossal eggs, lightly beaten
- Cooking spray
