- 200g self-raising flour
- 1 tsp baking powder
- 1 ½ tsp blended spice
- 100g butter
- 85g gentle muscovado sugar
- 100g blended dried fruit
- 1 egg, overwhelmed
- 2 tbsp milk
- demerara sugar, or roughly crushed sugar cubes, for sprinkling

STEP 1
Heat oven to 180C/160C fan/gasoline 4. Line a baking sheet with baking parchment. Tip the flour, baking powder and 1 tsp spice into a bowl. Add the butter, minimize into minute pieces. Rub the butter into the flour until the mixture kinds magnificent crumbs (or enact this in the food processor).

STEP 2
Chase in the muscovado sugar and fruit, then add the egg and milk. Mix to a moderately agency dough. Spoon 10 tough blobs of the mixture onto the baking sheet, leaving room for only a miniature of spreading. Mix collectively the sugar and superior blended spice and sprinkle over the cakes. Bake for 20-25 minutes until golden brown.
