Roast Turkey stuffed with Apple, Pistachio & Prune

  • 4.5kg – 5kg turkey (natural if imaginable)
  • 250g unsalted butter
  • 1 cup white wine (use something that you are going to fortunately drink over lunch, or at the same time as you put together lunch – I frail surely one of my favorites, Brokenwood Semillon)
  • 4 day-inclined bread rolls (I frail 2 white and 2 grain), roughly torn into little pieces
  • 1 brown onion, finely diced
  • 3 cloves garlic, finely chopped
  • 2 Granny Smith apples, coarsely grated
  • 250 grams pitted prunes, chopped
  • 150 grams pistachios, peeled
  • Tiny bunch memoir, chopped
  • 1 Tablespoon chopped thyme leaves
  • 2 lemons
  • Glug of olive oil
  • Salt and pepper to taste
