Red meat-and-Pineapple Tacos with Mojo Beans

  • 1 onion, chopped
  • 1 garlic clove, chopped

  • 1 c. chopped original pineapple
  • corn tortillas, warmed

Mojo Unlit Beans

  • 1 tbsp. canola oil
  • 1 shallot, chopped
  • 1 garlic clove, chopped
  • 1 tsp. orange zest
  • 1 (19.75-oz.) can black beans
  • 2 tbsp. original orange juice
  • kosher salt
  • Freshly ground black pepper
  • queso fresco


    1. Step 1Prep Tacos: Mix onion, garlic, chili powder, 1 teaspoon salt, and 1/2 teaspoon pepper in a bowl. Add purple meat and creep to coat; let stand quarter-hour.
    2. Step 2Meanwhile, toss collectively jicama, radish, cilantro, lime juice, and mayonnaise in a bowl. Season with salt and pepper.
