  • In a medium bowl, bound together quinoa, flour, baking powder, and salt. In a single other medium bowl, bound together egg, egg white, butter, milk, and syrup until gentle. Add egg combination to flour combination and bound to combine.


  • Frivolously coat a clear nonstick skillet or griddle with butter and warmth over medium-high. Descend batter by heaping tablespoonfuls into skillet. Cook until bubbles seem on top, 2 minutes. Flip cakes and cook dinner until golden brown on underside, 2 minutes. Wipe skillet dapper and repeat with extra melted butter and final batter (reduce again heat to medium, if overbrowning). Support with maple syrup and new fruit or preserves, if desired.

Cook’s Notes

Freeze cakes between sheets of waxed paper in zip-top bags, up to 1 month. Reheat in the toaster.
