Substances:
- 1.5kg stewing pork (shin or gravy pork), cut into 3cm cubes
- ½ cup simple flour
- ½ tsp salt
- ¼ tsp floor white pepper
- ¼ cup olive oil
- 12 pearl onions, peeled (stare notes)
- 250g tiny button mushrooms (stare notes)
- 1 bunch Dutch (youngster) carrots, peeled, tops trimmed
- 4 cloves garlic, chopped
- ¼ cup tomato paste
- 3 bay leaves
- 1 cup crimson wine
- 1 cup pork stock
