  • 1.5kg stewing pork (shin or gravy pork), cut into 3cm cubes
  • ½ cup simple flour
  • ½ tsp salt
  • ¼ tsp floor white pepper
  • ¼ cup olive oil
  • 12 pearl onions, peeled (stare notes)
  • 250g tiny button mushrooms (stare notes)
  • 1 bunch Dutch (youngster) carrots, peeled, tops trimmed
  • 4 cloves garlic, chopped
  • ¼ cup tomato paste
  • 3 bay leaves
  • 1 cup crimson wine
  • 1 cup pork stock
