Mini Carrot Truffles
Formulation:
- 450g carrot, skin on and roughly chopped
- 4 right eggs
- 140g coconut oil, olive oil or softened butter
- 250g self elevating flour, can narrate GF
- 1 tsp baking powder
- 90g sugar or sweetener of desire
- 1/2 tsp salt, no longer obligatory
- 2 1/2 tsp ground cinnamon
- 2 tsp vanilla bean paste
- 100g chopped walnuts or sultanas, no longer obligatory
