Mini Carrot Truffles

Formulation:

  • 450g carrot, skin on and roughly chopped
  • 4 right eggs
  • 140g coconut oil, olive oil or softened butter
  • 250g self elevating flour, can narrate GF
  • 1 tsp baking powder
  • 90g sugar or sweetener of desire
  • 1/2 tsp salt, no longer obligatory
  • 2 1/2 tsp ground cinnamon
  • 2 tsp vanilla bean paste
  • 100g chopped walnuts or sultanas, no longer obligatory
