Kate Smith’s Griddle Truffles
Elements:
- * 1 1/4 cup sifted cake flour
- * 1 1/4 tsp baking powder
- * 1/2 tsp salt
- * 2 egg yolk, evenly overwhelmed
- * 3/4 cup milk
- * 2 tbsp butter, melted and cooled
- * 2 egg white, stiffly overwhelmed
Directions:
- Sift flour once, measure, then add baking powder and salt, and sift all over again.
- Combine egg yolks and milk; add incessantly to flour, beating only till snug.
- Add melted butter. Fold in egg whites.
- Cook on a scorching, greased griddle or frying pan. Makes about 10 griddle desserts.
