  • * 1 1/4 cup sifted cake flour
  • * 1 1/4 tsp baking powder
  • * 1/2 tsp salt
  • * 2 egg yolk, evenly overwhelmed
  • * 3/4 cup milk
  • * 2 tbsp butter, melted and cooled
  • * 2 egg white, stiffly overwhelmed

Directions:

  1. Sift flour once, measure, then add baking powder and salt, and sift all over again.
  2. Combine egg yolks and milk; add incessantly to flour, beating only till snug.
  3. Add melted butter. Fold in egg whites.
  4. Cook on a scorching, greased griddle or frying pan. Makes about 10 griddle desserts.
