Fat Vegetable Soup

- 1½cups prepared reduced-sodium roasted crimson pepper and tomato soup (equivalent to Pacific Natural)
- 1 thawed veggie burger, chopped
- ½cup chopped kale
- ¼cup chopped tomato
- 2tablespoons chopped crimson onion
- 2tablespoons thinly sliced artichoke hearts in oil
- 1tablespoon feta
- 1tablespoon sliced dusky olives

Mix soup, veggie burger, kale, tomato, onion and artichoke hearts. Simmer over medium heat unless onion is soft, about 10 minutes. Top with feta and olives.
