This cake is so factual I made it twice. Edna Lewis known as this her Busy-Day Cake and we’ve had tons of busy days around here. Visits from chums and household, events to wait on, and work all mean that I haven’t been in the kitchen as a lot as I admire. I first made this cake at about 10pm on a Sunday, I used to be desperate. Sooner than the cake even left the oven I knew I used to be elated I didn’t count on a extra acceptable time to bake.

Busy-Day Cake (adapted from a recipe by Edna Lewis)

  • 8 tablespoons butter (1 stick), at room temperature

Preheat the oven to 375°F. Butter and flour a 9-pace springform pan, location apart.
