- 2 onions, thinly sliced
- few thyme sprigs
- 2 tbsp olive oil
- 1 ½kg floury potato, akin to Maris Piper or Desirée, peeled and sliced thinly, by hand or using a meals processor
- 425ml vegetable inventory

STEP 1
Warmth oven to 200C/fan 180C/fuel 6. Fry the onions and thyme sprigs in the oil except softened and evenly colored (about 5 minutes).

STEP 2
Spread a layer of potatoes over the unpleasant of a 1.5-litre oiled gratin dish. Sprinkle over a pair of onions (search snort, above) and proceed layering, ending with a layer of potatoes. Pour over the inventory and bake for 50-60 minutes except the potatoes are cooked and the tip is golden and crisp.
