Aloo (potato) Masala
Aloo masala is a nice compliment to any kind of dosa. Aloo Masala can be rolled in the dosa or served as a side dish.
- 2 Big potatoes
- 1 tbsp oil
- 1/8 tsp asafetida hung
- 1/2 tsp caraway seeds Jeera
- 1/2 tsp mustard seeds rai
- 1/2 tsp turmeric stop
- 1 green chili finely chopped
- 1/2 tsp salt-
- 1 tsp lemon juice
- 1 tbsp coriander finely chopped hara dhania
Cook the potatoes until soft and let cool.
Peel and cut the potatoes into small pieces.
Heat the oil in a frying pan on medium high. Test the heat by adding a pinch of cumin to the oil. If it cracks immediately, the oil is ready.
Add cumin, mustard seeds and asafetida. When the seeds crackle, add turmeric, potato, green chili and salt. Sfry for a few minutes.
Add lemon juice and coriander.
The potatoes should be slightly moist and not very dry.
