Aloo (potato) Masala

Aloo masala is a nice compliment to any kind of dosa. Aloo Masala can be rolled in the dosa or served as a side dish.

  • 2 Big potatoes
  • 1 tbsp oil
  • 1/8 tsp asafetida hung
  • 1/2 tsp caraway seeds Jeera
  • 1/2 tsp mustard seeds rai
  • 1/2 tsp turmeric stop
  • 1 green chili finely chopped
  • 1/2 tsp salt-
  • 1 tsp lemon juice
  • 1 tbsp coriander finely chopped hara dhania
  • Cook the potatoes until soft and let cool.

  • Peel and cut the potatoes into small pieces.

  • Heat the oil in a frying pan on medium high. Test the heat by adding a pinch of cumin to the oil. If it cracks immediately, the oil is ready.

  • Add cumin, mustard seeds and asafetida. When the seeds crackle, add turmeric, potato, green chili and salt. Sfry for a few minutes.

  • Add lemon juice and coriander.

  • The potatoes should be slightly moist and not very dry.
